In 2009 the Balsamic Vinegar of Modena was registered by the European Union as IGP (Protected Geographical Indication). It is an ancient seasoning, already known by the Romans, made from fermented grapes, with the addition of aged vinegar and wine vinegar, and aged in wood.
Prosciutto di Parma has been able to establish itself in the whole world as a good, healthy and genuine product, without the addition of preservatives or additives. It is protected by the DOP mark (Denomination of Protected Origin) awarded by the European Union for its peculiar qualitative characteristics that depend essentially on the territory where it is produced. The secret? The skill of the master salters and the dry and delicate air of the fragrant Parma hills that offer the ideal climatic conditions for a natural seasoning.
